These Mini Banana Pudding Cheesecakes combine the best of two classic desserts! Creamy cheesecake filling is topped with sweet banana pudding and crunchy vanilla wafers for an irresistible treat.

  • 1 1/2 cups vanilla wafer crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup sour cream
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 2 cups milk
  • 2 ripe bananas, sliced
  • Whipped cream, for topping (optional)
  • Additional vanilla wafers, for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, combine vanilla wafer crumbs, sugar, and melted butter. Press the mixture evenly into the bottom of each muffin liner.
  3. In a large bowl, beat cream cheese and sugar until smooth and creamy. Beat in vanilla extract and egg until well combined. Stir in sour cream.
  4. Pour the cream cheese mixture evenly over the crusts.
  5. Bake for 18-20 minutes, or until the edges are set and the centers are slightly wobbly.
  6. Remove from oven and let cool completely. Refrigerate for at least 2 hours.
  7. Prepare vanilla pudding according to package directions using 2 cups of milk.
  8. Top each cheesecake with a layer of vanilla pudding and sliced bananas.
  9. Garnish with whipped cream and vanilla wafers, if desired.
  10. Serve chilled.

Notes

For an extra layer of flavor, try adding a drizzle of caramel sauce or a sprinkle of chopped pecans before serving.
