A creamy, flavorful nacho cheese sauce that’s perfect for dipping chips or drizzling over your favorite Mexican dishes. This easy homemade sauce combines cheese and spices for an irresistible snack.

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 ½ cups sharp cheddar cheese, shredded
  • ½ cup Monterey Jack cheese, shredded
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt to taste
  • 1 jalapeño, seeded and finely chopped (optional)

Instructions

  1. In a medium saucepan over medium heat, melt the butter until it begins to bubble.
  2. Whisk in the flour and cook for 1-2 minutes until it forms a smooth roux, taking care not to brown it.
  3. Gradually whisk in the milk, continuing until the mixture thickens, about 3-5 minutes.
  4. Reduce heat to low and stir in the shredded cheddar and Monterey Jack cheese until fully melted and smooth.
  5. Add chili powder, garlic powder, onion powder, and salt, stirring to combine.
  6. If using, stir in the finely chopped jalapeño for a spicy kick.
  7. Remove from heat and serve warm with tortilla chips or as a topping for nachos, tacos, or baked potatoes.

Notes

For a smoother sauce, use freshly shredded cheese instead of pre-shredded. You can also adjust spice levels by adding more chili powder or jalapeño according to taste.
