Delicious No Bake Pumpkin Cheesecake Balls

These No Bake Pumpkin Cheesecake Balls are the perfect fall treat! Creamy, sweet, and packed with pumpkin spice flavor, they’re incredibly easy to make and require no baking.

Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup pumpkin puree
  • 1/2 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup graham cracker crumbs, for coating
  • Optional: chopped pecans, sprinkles, or cinnamon sugar for coating

Instructions

  1. In a large bowl, beat the softened cream cheese until smooth and creamy.
  2. Add the pumpkin puree, powdered sugar, pumpkin pie spice, vanilla extract, and salt. Beat until well combined.
  3. Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up.
  4. Once chilled, use a spoon or cookie scoop to form the cheesecake mixture into small balls.
  5. Roll each ball in the graham cracker crumbs (or other coating of your choice) until fully coated.
  6. Place the coated cheesecake balls on a baking sheet lined with parchment paper.
  7. Refrigerate for at least 15 minutes before serving.

Notes
