This No-Bake Pumpkin Cheesecake is a creamy, dreamy dessert that’s perfect for fall! It’s easy to make with a graham cracker crust and a rich pumpkin spice filling, no oven required.

  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • For the Filling:
  • 16 ounces cream cheese, softened
  • 1 1/2 cups pumpkin puree
  • 1 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 8 ounces whipped topping, thawed

Instructions

  1. Make the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a 9-inch springform pan.
  2. Make the Filling: In a large bowl, beat the cream cheese until smooth. Add the pumpkin puree, powdered sugar, pumpkin pie spice, vanilla extract, and salt. Beat until well combined.
  3. Gently fold in the whipped topping.
  4. Pour the filling over the crust.
  5. Cover and refrigerate for at least 4 hours, or preferably overnight.
  6. Before serving, remove the cheesecake from the springform pan.
  7. Slice and serve.
