Ingredients

Scale
  • 1 ½ cups granulated sugar
  • ¼ cup unsweetened cocoa powder
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 3 cups milk
  • 4 large egg yolks, lightly beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 baked 9-inch pie crust
  • Whipped cream, for serving (optional)

Instructions

  1. In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt.
  2. Gradually whisk in the milk until smooth.
  3. Cook over medium heat, stirring constantly, until the mixture begins to thicken and bubble.
  4. Reduce heat to low and continue to cook, stirring constantly, for 1 minute.
  5. Remove from heat. Gradually whisk about 1/2 cup of the hot mixture into the egg yolks to temper them.
  6. Pour the tempered egg yolk mixture back into the saucepan.
  7. Cook over low heat, stirring constantly, for 1 minute.
  8. Remove from heat and stir in the butter and vanilla extract until smooth.
  9. Pour the chocolate filling into the baked pie crust.
  10. Cover the pie with plastic wrap, pressing the wrap directly onto the surface of the filling to prevent a skin from forming.
  11. Refrigerate for at least 3 hours, or until set.
  12. Serve chilled with whipped cream, if desired.

Notes

For an extra layer of flavor, sprinkle a little sea salt on top of the pie before serving.
