This vibrant One-Pan Chicken Feta Pomegranate is a flavorful and easy weeknight meal. Juicy chicken thighs bake with brussels sprouts, red onion, and are topped with salty feta and sweet pomegranate seeds for a complete and delicious dish.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb Brussels sprouts, trimmed and halved
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 4 oz feta cheese, crumbled
  • 1/2 cup pomegranate seeds
  • 2 tablespoons balsamic glaze (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken, Brussels sprouts, and red onion with olive oil, oregano, garlic powder, red pepper flakes (if using), salt, and pepper.
  3. Spread the mixture in a single layer on a large baking sheet.
  4. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  5. Remove from oven and sprinkle with feta cheese and pomegranate seeds.
  6. Drizzle with balsamic glaze, if desired, and serve immediately.
