One-Pan Chicken Lo Mein

This One-Pan Chicken Lo Mein is a quick and easy dinner recipe perfect for busy weeknights. Tender chicken, flavorful vegetables, and perfectly cooked noodles come together in one pan for a delicious and satisfying meal.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup sliced carrots
  • 1 cup sliced mushrooms
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 ounces lo mein noodles, cooked according to package directions
  • 2 green onions, sliced, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add bell peppers, carrots, and mushrooms to the skillet. Cook until vegetables are tender-crisp, about 5 minutes.
  4. Add garlic and ginger to the skillet and cook for 1 minute more, until fragrant.
  5. In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, rice vinegar, and red pepper flakes (if using).
  6. Pour sauce over chicken and vegetables and bring to a simmer.
  7. Add cooked lo mein noodles to the skillet and toss to coat in the sauce.
  8. Garnish with green onions and sesame seeds before serving.

Notes

For a richer flavor, try adding a splash of oyster sauce to the sauce mixture. Serve immediately.
