This easy one-pan gnocchi with spinach and mushrooms is a flavorful and comforting weeknight meal. Ready in under 30 minutes, it’s perfect for busy schedules and minimal cleanup!

  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 (17.6 ounce) package shelf-stable gnocchi
  • 5 ounces baby spinach
  • 1/2 cup vegetable broth
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until softened and browned, about 8-10 minutes.
  2. Add garlic and cook for 1 minute more, until fragrant.
  3. Stir in gnocchi, spinach, and vegetable broth. Season with salt and pepper.
  4. Bring to a simmer, then cover and cook until gnocchi is tender and spinach is wilted, about 5-7 minutes.
  5. Stir in Parmesan cheese. Serve immediately, garnished with additional Parmesan cheese, if desired.

Notes

For extra flavor, try adding a squeeze of lemon juice before serving.
