1 pound cremini mushrooms, sliced
2 cloves garlic, minced
1 (17.6 ounce) package shelf-stable gnocchi
5 ounces baby spinach
1/2 cup vegetable broth
1/4 cup grated Parmesan cheese, plus more for serving
Salt and pepper to taste
Instructions
Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until softened and browned, about 8-10 minutes.
Add garlic and cook for 1 minute more, until fragrant.
Stir in gnocchi, spinach, and vegetable broth. Season with salt and pepper.
Bring to a simmer, then cover and cook until gnocchi is tender and spinach is wilted, about 5-7 minutes.
Stir in Parmesan cheese. Serve immediately, garnished with additional Parmesan cheese, if desired.
