  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 (17.6 ounce) package potato gnocchi
  • 5 ounces baby spinach
  • 1/2 cup vegetable broth
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large oven-safe skillet over medium-high heat.
  2. Add mushrooms and cook until softened and browned, about 8-10 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Stir in gnocchi, spinach, and vegetable broth. Bring to a simmer.
  5. Cover the skillet and transfer to a preheated oven at 400°F (200°C).
  6. Bake for 10-15 minutes, or until gnocchi is tender and spinach is wilted.
  7. Remove from oven and stir in Parmesan cheese.
  8. Season with salt and pepper to taste.
  9. Serve immediately, garnished with additional Parmesan cheese if desired.

Notes

For a richer flavor, try adding a dollop of pesto to the gnocchi before serving.
