One-Pot Lamb Kalya with Yogurt and Cream

Enjoy a rich and flavorful One-Pot Lamb Kalya, where tender lamb simmers in a creamy yogurt-based gravy infused with aromatic spices for a comforting Indian-inspired meal.

  • 1 lb lamb shoulder, cut into cubes
  • 1 cup plain yogurt
  • 1/4 cup heavy cream
  • 2 tbsp vegetable oil
  • 1 large onion, finely sliced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 2 green chilies, slit
  • 1 cinnamon stick
  • 3 cloves
  • 3 cardamom pods
  • Salt to taste
  • 1/2 cup water
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add cinnamon, cloves, and cardamom pods and sauté for 1 minute until fragrant.
  2. Add sliced onions and sauté until golden brown, about 8 minutes.
  3. Add garlic, ginger, and green chilies; cook for another 2 minutes.
  4. Mix in coriander, cumin, turmeric, red chili powder, and salt. Stir well for 1 minute.
  5. Add lamb cubes and cook until browned on all sides, about 8–10 minutes.
  6. Reduce heat, add yogurt slowly while stirring to prevent curdling, then add water.
  7. Cover and simmer on low heat for 1 to 1.5 hours until lamb is tender.
  8. Stir in heavy cream and garam masala; cook for an additional 5 minutes.
  9. Garnish with fresh coriander leaves and serve hot with rice or flatbread.

Notes

For extra richness, sprinkle some toasted nuts on top before serving or pair with a cooling cucumber raita.
