one-pot red beans and rice

This classic One-Pot Red Beans and Rice recipe is a comforting and flavorful meal perfect for a weeknight dinner. It’s packed with smoky sausage, tender red beans, and fragrant spices, all cooked together in one pot for easy cleanup!

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 (15-ounce) can red kidney beans, rinsed and drained
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional garnishes: chopped green onions, hot sauce

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage and cook until browned, about 5-7 minutes. Remove sausage from pot and set aside.
  2. Add onion and bell pepper to the pot and cook until softened, about 5 minutes. Add garlic, Cajun seasoning, smoked paprika, and cayenne pepper (if using) and cook for 1 minute more.
  3. Stir in rice and cook for 1 minute, stirring constantly.
  4. Pour in chicken broth and bring to a boil. Stir in red kidney beans, bay leaf, and browned sausage.
  5. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  6. Remove from heat and let stand for 5 minutes before fluffing with a fork. Season with salt and pepper to taste.
  7. Garnish with chopped green onions and hot sauce, if desired.

Notes

For a creamier dish, mash some of the red beans before adding them to the pot. Serve with a side of cornbread for a complete meal!
