  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato medallions with olive oil, minced garlic, dried thyme, rosemary, salt, and pepper.
  3. Arrange the medallions in a single layer on the prepared baking sheet.
  4. Bake for 15 minutes, then sprinkle Parmesan cheese over the medallions.
