  • 1/4 teaspoon black pepper
  • 2 eggs
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine chopped pecans, panko breadcrumbs, Parmesan cheese, parsley, garlic powder, salt, and pepper.
  3. In another bowl, beat the eggs until well combined.
  4. Dip each tilapia fillet first into the beaten eggs, then press into the pecan mixture, ensuring an even coating.
  5. Place the coated fillets on the prepared baking sheet and drizzle lightly with olive oil.
  6. Bake for 12-15 minutes or until the fish is cooked through and the crust is golden brown.

Notes

For extra crispiness, you can briefly broil the tilapia for 1-2 minutes after baking. Serve with a side of steamed vegetables or a fresh salad.
