These Pecan Pie Cheesecake Bars combine the best of both worlds! A creamy cheesecake layer sits atop a buttery crust, topped with a gooey pecan pie filling for a truly decadent dessert.

  • For the Crust:
  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • For the Cheesecake Layer:
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 large egg
  • For the Pecan Pie Topping:
  • 1/2 cup unsalted butter
  • 1/2 cup packed brown sugar
  • 1/4 cup corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups pecan halves

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9×13 inch baking pan.
  2. Make the Cheesecake Layer: In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream and vanilla extract. Add egg and beat until just combined. Pour over the crust.
  3. Make the Pecan Pie Topping: In a saucepan, melt butter over medium heat. Stir in brown sugar, corn syrup, vanilla extract, and salt. Bring to a simmer and cook for 1 minute, stirring constantly. Remove from heat and stir in pecan halves.
  4. Assemble and Bake: Pour the pecan pie topping evenly over the cheesecake layer. Bake for 30-35 minutes, or until the cheesecake is set and the topping is bubbly.
  5. Cool and Chill: Let cool completely in the pan, then refrigerate for at least 2 hours before cutting into bars.

Serve chilled and garnish with a dollop of whipped cream or a sprinkle of chopped pecans, if desired.
