Peppermint Bark Brownies

Indulge in rich, fudgy brownies layered with festive peppermint bark for a perfect holiday treat that combines chocolate and refreshing mint.

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 8 ounces semi-sweet chocolate, chopped
  • 8 ounces white chocolate, chopped
  • 1/2 teaspoon peppermint extract
  • 1/2 cup crushed peppermint candies or candy canes

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. Melt the butter in a microwave-safe bowl or on the stovetop, then stir in the sugar until combined.
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, folding until just combined.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with moist crumbs.
  7. Allow brownies to cool completely in the pan.
  8. Melt the semi-sweet chocolate and spread evenly over the cooled brownies.
  9. Melt the white chocolate with peppermint extract and drizzle or spread over the semi-sweet chocolate layer.
  10. Sprinkle crushed peppermint candies over the white chocolate layer and gently press them in.
  11. Refrigerate for at least 30 minutes until the peppermint bark sets.
  12. Cut into squares and serve.

Notes

For extra crunch, add chopped nuts to the batter or substitute peppermint extract with a hint of almond extract for a different twist.
