Peppermint Meltaway Cookies

These Peppermint Meltaway Cookies are melt-in-your-mouth delicious! Infused with peppermint and a hint of vanilla, they’re perfect for the holidays or any time you crave a sweet treat.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup crushed peppermint candies, for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Beat in the cornstarch, vanilla extract, and peppermint extract.
  4. In a separate bowl, whisk together the flour and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheets.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Remove from oven and immediately press crushed peppermint candies gently into the tops of the cookies.
  9. Let cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a more intense peppermint flavor, add a drop or two of peppermint oil to the dough. Store in an airtight container at room temperature.
