  • 1 tablespoon olive oil
  • 1 pound sirloin steak, thinly sliced
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, softened
  • 1 cup shredded provolone cheese
  • Salt to taste
  • Optional: Crusty rolls for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the sliced steak and cook until browned, about 5-7 minutes. Remove the steak from the pot and set aside.
  2. Add the chopped onion and bell peppers to the pot and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the beef broth, Worcestershire sauce, thyme, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes to allow the flavors to meld.
  4. Stir in the softened cream cheese until it is completely melted and the soup is creamy.
  5. Return the cooked steak to the pot. Stir in the shredded provolone cheese until melted.
  6. Season with salt to taste.
  7. Serve hot and enjoy!
