Pineapple Cowboy Candy

Sweet, spicy, and smoky, Pineapple Cowboy Candy is a surprisingly addictive treat! Candied pineapple is infused with chili and spices for a uniquely delicious snack.

Ingredients

  • 1 fresh pineapple, peeled, cored, and sliced into 1/4-inch thick rings
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1/4 cup apple cider vinegar
  • 2 tablespoons smoked paprika
  • 1 tablespoon chili powder
  • 1 teaspoon cayenne pepper (or more, to taste)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 225°F (107°C). Line a baking sheet with parchment paper.
  2. In a large saucepan, combine sugar, water, apple cider vinegar, smoked paprika, chili powder, cayenne pepper, garlic powder, and salt. Bring to a simmer over medium heat, stirring until sugar is dissolved.
  3. Add pineapple rings to the saucepan. Simmer for 30-40 minutes, or until pineapple is slightly translucent and syrup has thickened slightly, flipping the rings halfway through.
  4. Remove pineapple rings from the syrup and place them in a single layer on the prepared baking sheet.
  5. Bake for 1-1.5 hours, flipping the rings every 30 minutes, until they are slightly dried and sticky.
  6. Remove from oven and let cool completely on the baking sheet. The pineapple will become more chewy as it cools.
  7. Store in an airtight container at room temperature.

Notes

Serve Pineapple Cowboy Candy as a snack, appetizer, or as a unique topping for burgers or grilled meats. For a sweeter candy, reduce the amount of cayenne pepper.
