This Possum Pie recipe delivers a surprisingly savory and satisfying meal. Made with tender possum meat and a flaky crust, it’s a unique dish for adventurous eaters.

  • 1 (3-4 pound) possum, skinned and cleaned
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup diced potatoes
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 (14.1 ounce) package refrigerated pie crusts
  • 1 egg, beaten

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large pot, combine the possum, salt, pepper, and garlic powder. Add enough water to cover. Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the possum is tender.
  3. Remove the possum from the pot and let it cool slightly. Shred the meat and discard the bones.
  4. In the same pot, sauté the onion, carrots, and celery in butter until softened.
  5. Stir in the flour and cook for 1 minute. Gradually whisk in the chicken broth and bring to a simmer.
  6. Add the potatoes, peas, and corn. Simmer until the potatoes are tender, about 15 minutes.
  7. Stir in the shredded possum meat.
  8. Pour the possum mixture into a 9-inch pie dish.
  9. Top with one of the pie crusts. Cut slits in the crust to vent steam. Brush with the beaten egg.
  10. Bake for 30-40 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Let cool slightly before serving.

Notes

Serve with a side of mashed potatoes or green beans for a complete meal. For a richer flavor, use beef broth instead of chicken broth.
