Potato Soup

Warm and Comforting Bowl of Potato Soup

This creamy and comforting potato soup is perfect for a chilly day. Made with simple ingredients, it’s a hearty and satisfying meal the whole family will love.

Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 1 large onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese, bacon bits, sour cream, chives

Instructions

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the cubed potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  3. Carefully transfer the soup to a blender or use an immersion blender to blend until smooth.
  4. Return the soup to the pot and stir in the heavy cream and milk. Heat through, but do not boil.
  5. Season with salt and pepper to taste.
  6. Serve hot with your favorite toppings.

Notes

For a thicker soup, mash some of the potatoes before blending. You can also add other vegetables like carrots or celery for extra flavor.
