  • 3/4 cup packed brown sugar
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 1/2 teaspoon salt
  • 1 (15-ounce) can pumpkin puree
  • 1 (14-ounce) can sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine flour, brown sugar, butter, and salt. Cut in the butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press half of the crumb mixture into the prepared baking pan.
  4. In a separate bowl, whisk together pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin mixture over the crust in the baking pan.
  6. Sprinkle the remaining crumb mixture evenly over the pumpkin filling.
  7. Bake for 30-35 minutes, or until the filling is set and the topping is golden brown.
  8. Let cool completely before cutting into bars.
