Pumpkin Spice French Toast Casserole

This Pumpkin Spice French Toast Casserole is a warm, comforting breakfast perfect for fall, featuring rich pumpkin flavor and aromatic spices baked into fluffy bread layers.

Ingredients

Scale
  • 1 loaf of French bread, cubed (about 8 cups)
  • 2 cups whole milk
  • 1 cup canned pumpkin puree
  • 4 large eggs
  • 3/4 cup brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • Powdered sugar and maple syrup for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together the milk, pumpkin puree, eggs, brown sugar, pumpkin pie spice, cinnamon, vanilla extract, salt, and melted butter until well combined.
  3. Add the cubed French bread to the mixture and gently toss to coat all pieces thoroughly.
  4. Pour the coated bread cubes into the prepared baking dish, spreading evenly.
  5. Cover the dish with plastic wrap and refrigerate for at least 1 hour or overnight to allow the bread to soak up the custard.
  6. Remove the plastic wrap and bake uncovered for 45 to 50 minutes, or until the casserole is set and the top is golden brown.
  7. Let the casserole cool slightly before serving. Dust with powdered sugar and drizzle with maple syrup if desired.

Notes

For an extra crunch, sprinkle chopped pecans on top before baking or serve with whipped cream for added indulgence.
