This Ranch Taco Party Bowl combines zesty ranch dressing with seasoned taco ingredients for a flavorful and easy-to-assemble Mexican-inspired meal perfect for gatherings or weeknight dinners.

  • 1 packet taco seasoning
  • 1 cup cooked black beans
  • 1 cup cooked corn kernels
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup sliced black olives
  • 1/2 cup ranch dressing
  • 1 cup cooked rice or quinoa (optional)
  • Fresh cilantro for garnish

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned and fully cooked, about 7-8 minutes.
  2. Drain excess fat and stir in the taco seasoning with 1/4 cup water; simmer for 3-4 minutes until thickened.
  3. While beef cooks, prepare black beans and corn by warming them, if desired.
  4. To assemble the bowl, start with a base of rice or quinoa if using.
  5. Add a layer of shredded lettuce, followed by seasoned beef, black beans, and corn.
  6. Top with diced tomatoes, cheddar cheese, green onions, and black olives.
  7. Drizzle ranch dressing evenly over the assembled ingredients.
  8. Garnish with fresh cilantro and serve immediately.

Notes

For extra crunch, add crushed tortilla chips on top just before serving, or swap ranch dressing for a spicy chipotle ranch for added heat.
