Warm up with this comforting Ravioli Soup, a quick and easy meal perfect for busy weeknights. Tender cheese ravioli simmer in a flavorful tomato broth with fresh spinach for a satisfying and delicious dish.

  • 1 tablespoon olive oil
  • 1/2 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (20 ounce) package frozen cheese ravioli
  • 5 ounces fresh spinach, roughly chopped
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Stir in crushed tomatoes, chicken broth, oregano, salt, and pepper. Bring to a simmer.
  3. Add frozen ravioli and cook according to package directions, usually about 5-7 minutes, or until ravioli are tender and heated through.
  4. Stir in spinach and cook until wilted, about 1-2 minutes.
  5. Serve immediately, garnished with grated Parmesan cheese.

Notes

For a heartier soup, add Italian sausage or ground beef when browning the onion and garlic. A dollop of ricotta cheese also makes a delicious addition.
