Red Velvet Sugar Cookies

  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 tablespoons buttermilk
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • ½ teaspoon white vinegar
  • ½ teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and baking powder; set aside.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the egg, buttermilk, vanilla extract, red food coloring, and vinegar to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients into the wet ingredients and mix until a soft dough forms.
  6. Scoop dough by tablespoonfuls onto the prepared baking sheets, spacing about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are set but centers are still soft.
  8. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

For extra flavor, consider adding a cream cheese frosting or a dusting of powdered sugar before serving.
