A Pile of Perfectly Roasted Carrots

These roasted carrots are a simple and delicious side dish, bringing out their natural sweetness with a touch of olive oil and herbs. Perfect alongside any main course, they’re sure to become a family favorite.

  • 1 pound carrots, peeled and sliced into 1/2-inch thick rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried thyme (or rosemary)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the carrots with olive oil, salt, pepper, and thyme.
