Homemade Sausage and Tortellini Soup

Warm up with this hearty Sausage and Tortellini Soup! This comforting soup is packed with Italian sausage, cheese tortellini, and flavorful vegetables in a rich tomato broth.

  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 9 ounces cheese tortellini
  • 1 cup chopped fresh spinach
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the olive oil, chopped onion, and minced garlic to the pot. Cook until the onion is softened, about 5 minutes.
  3. Pour in the chicken broth, diced tomatoes, and tomato sauce. Stir in the dried oregano and dried basil. Season with salt and pepper to taste.
  4. Bring the soup to a simmer and cook for 15 minutes to allow the flavors to meld.
  5. Stir in the cheese tortellini and cook according to package directions, usually about 3-5 minutes, or until the tortellini is tender.
  6. Stir in the chopped spinach just before serving.
  7. Ladle the soup into bowls and garnish with grated Parmesan cheese.

Notes

For a spicier soup, use hot Italian sausage. You can also add other vegetables like carrots, celery, or zucchini.
