This hearty sausage, sweet potato, and kale soup is packed with flavor and nutrients. It’s a comforting and healthy meal perfect for chilly evenings.

Ingredients

  • 1 pound Italian sausage, removed from casing
  • 1 large sweet potato, peeled and diced
  • 1 bunch kale, stemmed and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot or Dutch oven, brown the sausage over medium-high heat. Drain off any excess grease.
  2. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Add the sweet potato, diced tomatoes, chicken broth, thyme, and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer for 15 minutes, or until the sweet potato is tender.
  4. Stir in the kale and cook until wilted, about 5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot.

Notes

For a creamier soup, stir in a splash of heavy cream or coconut milk at the end. Serve with crusty bread for dipping.
