  • 1 pound large shrimp, peeled and deveined
  • 1 cup freshly squeezed lime juice
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup tomato, seeded and diced
  • 1/4 cup jalapeño, seeded and minced (optional)
  • 1 avocado, diced
  • Salt and pepper to taste
  • Tortilla chips or tostadas, for serving

Instructions

  1. In a glass bowl, combine the shrimp and lime juice. Ensure the shrimp is fully submerged in the lime juice.
  2. Cover the bowl and refrigerate for at least 30 minutes, or until the shrimp turns opaque and pink, indicating it is ‘cooked’ by the acid.
  3. Drain the shrimp, discarding the lime juice.
  4. In a separate bowl, combine the cooked shrimp, red onion, cilantro, tomato, and jalapeño (if using).
  5. Gently fold in the diced avocado.
  6. Season with salt and pepper to taste.
  7. Serve immediately with tortilla chips or tostadas.

Notes

For a milder flavor, remove the seeds and membranes from the jalapeño before mincing. You can also add a splash of hot sauce for extra heat. Serve immediately for the best flavor and texture.
