  • 1/2 cup onion, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1/2 cup celery, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 green onions, sliced
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • 1 cup chicken broth

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add onion, green bell pepper, and celery; sauté until tender, about 5 minutes.
  3. Stir in garlic and cook for another minute until fragrant.
  4. Add shrimp to the skillet and sprinkle with Cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper. Cook until shrimp turn pink, about 3-4 minutes.
  5. Pour in chicken broth and bring to a simmer.
  6. Stir in cooked rice, mixing well with the shrimp and vegetables.
  7. Cook for 5 more minutes, allowing the flavors to blend and rice to absorb the broth.
  8. Remove from heat and stir in green onions and parsley.
  9. Serve hot, garnished with extra parsley if desired.

Notes

For added depth, try using Andouille sausage alongside the shrimp or serve with a wedge of lemon for a citrusy kick.
