shrimp linguine recipe

This shrimp linguine recipe is a quick and flavorful weeknight meal. Tender shrimp and perfectly cooked linguine are tossed in a light and zesty garlic butter sauce.

  • 1 pound linguine pasta
  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 lemon, zested and juiced
  • Red pepper flakes, to taste
  • Salt and black pepper, to taste

Instructions

  1. Cook linguine according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  2. While the pasta is cooking, melt butter in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add shrimp to the skillet and cook until pink and cooked through, about 3-5 minutes.
  4. Pour in white wine and lemon juice, and let simmer for 1 minute, scraping up any browned bits from the bottom of the pan.
  5. Add cooked linguine to the skillet. Toss to coat with the sauce.
  6. Add reserved pasta water, a little at a time, until the sauce reaches your desired consistency.
  7. Stir in parsley, Parmesan cheese, lemon zest, and red pepper flakes. Season with salt and pepper to taste.
  8. Serve immediately, garnished with extra Parmesan cheese and parsley.

Notes

For an extra layer of flavor, try adding a pinch of saffron to the sauce while it’s simmering.
