  • 6 boneless, skinless chicken thighs
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (6 ounce) can tomato paste
  • 1/2 cup dry red wine (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley, for garnish
  • Cooked pasta or polenta, for serving

Instructions

  1. Place the chopped onion, minced garlic, and chopped bell pepper in the bottom of your slow cooker.
  2. Season chicken thighs with salt and pepper. Place the chicken thighs on top of the vegetables.
  3. In a large bowl, combine the crushed tomatoes, diced tomatoes, tomato paste, red wine (if using), oregano, basil, salt, and pepper. Pour the sauce over the chicken.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and tender.
  5. Shred the chicken with two forks.
  6. Serve the chicken cacciatore over cooked pasta or polenta. Garnish with fresh parsley.
