  • 1.5 lbs boneless, skinless chicken thighs
  • 8 cups chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1 cup egg noodles
  • 1/4 cup chopped fresh parsley
  • Salt to taste

Instructions

  1. Place chicken thighs, chicken broth, carrots, celery, onion, garlic, thyme, rosemary, and pepper in a slow cooker.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  3. Remove chicken from the slow cooker and shred with two forks. Return shredded chicken to the slow cooker.
  4. Stir in egg noodles. Cover and cook on high for 15-20 minutes, or until noodles are tender.
  5. Stir in parsley and season with salt to taste.
  6. Serve hot and enjoy!

Notes

For a richer flavor, use homemade chicken broth. You can also add other vegetables like zucchini or peas.
