Slow Cooker Cowboy Casserole

A hearty and flavorful slow cooker casserole packed with ground beef, beans, corn, and peppers, perfect for an easy and comforting dinner.

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 bell pepper, diced
  • 1 medium onion, diced
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 packet taco seasoning
  • 1 cup beef broth
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook ground beef until browned, then drain excess fat.
  2. Add diced onion and bell pepper to the beef; cook until softened, about 5 minutes.
  3. Transfer beef mixture to the slow cooker.
  4. Add black beans, pinto beans, corn, diced tomatoes with green chilies, taco seasoning, and beef broth; stir to combine.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  6. About 15 minutes before serving, sprinkle shredded cheddar cheese over the casserole and cover to melt.
  7. Serve warm, optionally garnished with chopped green onions or sour cream.

Notes

For extra flavor, serve with warm tortillas or over rice, and add a dollop of sour cream or guacamole on top.
