Appetizing Slow Cooker Taco Casserole

This Slow Cooker Taco Casserole is an easy and delicious weeknight meal! Layers of seasoned ground beef, tortillas, and cheese create a comforting and flavorful dish with minimal effort.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 10-12 corn tortillas, cut into wedges
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, salsa, guacamole, cilantro

Instructions

  1. In a skillet, brown ground beef over medium heat. Drain off any excess grease.
  2. Stir in taco seasoning, black beans, corn, and diced tomatoes and green chilies.
  3. In a slow cooker, layer half of the tortilla wedges on the bottom.
  4. Top with half of the meat mixture and half of the cheese.
  5. Repeat layers with remaining tortilla wedges, meat mixture, and cheese.
  6. Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until cheese is melted and bubbly.
  7. Serve with your favorite taco toppings.

Notes

For a spicier casserole, use hot taco seasoning or add a pinch of cayenne pepper to the meat mixture.
