Smashburger Quesadillas

Combine the craveable flavors of a smashburger with the cheesy goodness of a quesadilla! These Smashburger Quesadillas are quick, easy, and perfect for a satisfying weeknight meal.

  • 1 pound ground beef (80/20 blend)
  • 4 large flour tortillas
  • 4 slices cheddar cheese
  • 4 slices American cheese
  • 1/4 cup yellow mustard
  • 1/4 cup ketchup
  • 1 small dill pickle, thinly sliced
  • 1 small onion, thinly sliced
  • 2 tablespoons butter, divided
  • Salt and pepper to taste

Instructions

  1. Divide the ground beef into 8 equal portions (about 2 ounces each). Form each portion into a ball.
  2. Heat a large skillet or griddle over medium-high heat. Place two tortillas in the skillet.
  3. Quickly smash two beef balls onto each tortilla, using a spatula to press them thin. Season with salt and pepper.
  4. Cook for 2-3 minutes, or until the edges are crispy and browned. Flip the smashburgers and cook for another 1-2 minutes, or until cooked through.
  5. Top each smashburger patty with a slice of cheddar and a slice of American cheese.
  6. Spread mustard and ketchup over the cheese. Add sliced pickles and onions.
  7. Fold each tortilla in half, pressing gently.
  8. Melt 1 tablespoon of butter in the skillet. Cook the quesadillas for 2-3 minutes per side, or until golden brown and the cheese is melted and gooey.
  9. Repeat with the remaining ingredients.
  10. Cut each quesadilla into wedges and serve immediately.
