  • 1 cup sourdough discard
  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, whisk together the sourdough discard, apple cider, egg, vegetable oil, and vanilla extract until combined.
  3. In another bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Fold in granulated and brown sugar evenly into the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove from oven and allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra flavor, brush the warm bread with melted butter and sprinkle cinnamon sugar on top before serving.
