  • 2 tablespoons melted butter
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying
  • 1/2 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. In a large bowl, whisk together the sourdough discard, egg, melted butter, milk, and vanilla extract until well combined.
  2. In another bowl, mix the flour, granulated sugar, baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  4. Cover the dough and refrigerate for 30 minutes to firm up.
  5. On a lightly floured surface, roll out the dough to about 1/2-inch thickness.
  6. Use a donut cutter or two round cutters to shape the donuts and holes.
  7. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  8. Fry the donuts in batches for about 1-2 minutes per side or until golden brown.
  9. Use a slotted spoon to remove donuts and drain on paper towels.
  10. Mix granulated sugar and ground cinnamon in a shallow bowl, then toss warm donuts in the cinnamon sugar until evenly coated.
