Ingredients

Scale
  • 4 large sweet potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1/4 cup maple syrup, plus more for drizzling
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup butter, cold and cubed
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Boil the sweet potatoes until tender, about 15-20 minutes. Drain well.
  3. In a large bowl, mash the sweet potatoes with milk, melted butter, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  4. Transfer the sweet potato mixture to a greased 9×13 inch baking dish.
  5. In a separate bowl, combine the flour, brown sugar, and cold butter for the streusel topping. Cut the butter into the dry ingredients using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the chopped pecans.
  6. Sprinkle the streusel topping evenly over the sweet potato mixture.
  7. Bake for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.
  8. Drizzle with additional maple syrup before serving, if desired.

Notes

For an extra layer of flavor, add a tablespoon of bourbon or rum to the sweet potato mixture. You can also substitute walnuts for pecans in the streusel topping.
