  • 1 1/2 cups all-purpose flour
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 4-6 tablespoons ice water
  • For the Filling:
  • 1 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/4 cup light corn syrup
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups pecan halves

Instructions

  1. Make the Crust: In a large bowl, whisk together flour, sugar, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together.
  3. Press the dough evenly into the bottom of a 9×13 inch baking pan. Prick the crust all over with a fork.
  4. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until lightly golden.
  5. Make the Filling: While the crust is baking, prepare the filling. In a medium bowl, whisk together brown sugar, melted butter, corn syrup, eggs, vanilla extract, and salt until smooth.
  6. Stir in the pecan halves.
  7. Pour the filling over the pre-baked crust.
  8. Return to the oven and bake for 25-30 minutes, or until the filling is set and lightly golden brown.
  9. Let cool completely in the pan before cutting into bars.
