  • 1 red bell pepper, chopped
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 1 (10-ounce) can diced tomatoes and green chiles, undrained

  • 2 cups cooked chicken, shredded
  • Salt and pepper to taste

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Stir in black beans, corn, diced tomatoes and green chiles, chicken broth, chili powder, cumin, and cayenne pepper (if using). Bring to a simmer.
  3. Add shredded chicken and simmer for 10-15 minutes, or until heated through.
  4. Season with salt and pepper to taste.
  5. Serve hot, topped with your favorite toppings.

Notes

For a thicker soup, you can blend a portion of the soup before adding the chicken. Serve with tortilla chips for dipping!
