  • 1 pound elbow macaroni
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 4 cups shredded cheddar cheese
  • 1/2 cup blue cheese crumbles
  • 1/2 cup buffalo wing sauce
  • 1 pound cooked chicken, shredded
  • 2 tablespoons chopped fresh chives, for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cook macaroni according to package directions. Drain and set aside.
  3. In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute, until smooth.
  4. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  5. Reduce heat and simmer for 5 minutes, or until the sauce has thickened.
  6. Remove from heat and stir in cheddar cheese and blue cheese crumbles until melted and smooth.
  7. Stir in buffalo wing sauce and shredded chicken. Season with salt and pepper to taste.
  8. Add cooked macaroni to the cheese sauce and stir to combine.
  9. Pour macaroni and cheese into the prepared baking dish.
  10. Bake for 20-25 minutes, or until golden brown and bubbly.
  11. Garnish with chopped chives before serving.

Notes

For an extra crispy top, sprinkle breadcrumbs over the mac and cheese before baking.
