Spicy Buffalo Chicken Mac and Cheese Overview

This Spicy Buffalo Chicken Mac and Cheese combines creamy, cheesy goodness with the kick of buffalo sauce and tender chicken. It’s the perfect comfort food with a fiery twist!

  • 1 pound elbow macaroni
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 4 cups shredded cheddar cheese
  • 1 cup cooked chicken, shredded
  • 1/2 cup buffalo wing sauce, plus more for drizzling
  • 2 tablespoons chopped green onions, for garnish
  • Optional: Blue cheese crumbles, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cook macaroni according to package directions. Drain well and set aside.
  3. In a large saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually whisk in milk until smooth.
  4. Bring to a simmer, stirring constantly. Reduce heat and simmer for 5 minutes, or until thickened.
  5. Stir in salt, pepper, and garlic powder.
  6. Remove from heat and stir in cheddar cheese until melted and smooth.
  7. Stir in cooked macaroni, shredded chicken, and buffalo wing sauce.
  8. Pour into the prepared baking dish.
  9. Bake for 20-25 minutes, or until golden brown and bubbly.
  10. Let stand for 5 minutes before serving. Drizzle with extra buffalo sauce and garnish with green onions and blue cheese crumbles (if using).

Notes

For an extra creamy mac and cheese, use a blend of cheddar and Monterey Jack cheese. You can also add a breadcrumb topping for added crunch.
