Strawberry Aquafaba Mousse Delight

This Strawberry Aquafaba Mousse is a light and airy dessert made entirely without dairy or eggs! It’s a surprisingly simple and delicious way to enjoy the taste of fresh strawberries.

  • 1 cup aquafaba (liquid from canned chickpeas)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 pound fresh strawberries, hulled and pureed
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. In a large bowl, beat the aquafaba with an electric mixer on high speed until stiff peaks form, about 8-10 minutes.
  2. Gradually add the sugar, beating until the meringue is glossy and smooth.
  3. Gently fold in the vanilla extract, strawberry puree, lemon juice, and salt.
  4. Divide the mousse into individual serving glasses or bowls.
  5. Refrigerate for at least 2 hours, or until set.
  6. Garnish with fresh strawberries before serving.

Notes

For a richer flavor, add a tablespoon of strawberry liqueur or a few drops of red food coloring. You can also top the mousse with whipped coconut cream for a dairy-free option.
