  • 1/4 cup chia seeds
  • 1/2 cup fresh strawberries, hulled and chopped
  • 1 tablespoon maple syrup (or honey)
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional toppings: shredded coconut, extra strawberries, granola

Instructions

  1. In a medium bowl, whisk together the coconut milk, chia seeds, maple syrup, vanilla extract, and sea salt until well combined.
  2. Gently fold in the chopped strawberries.
  3. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
  4. Before serving, stir the pudding well. If it’s too thick, add a splash of coconut milk to reach your desired consistency.
  5. Serve chilled, topped with your favorite toppings like shredded coconut, extra strawberries, or granola.

Notes
