This classic strawberry pie is bursting with fresh, juicy strawberries in a sweet and slightly tangy glaze, all nestled in a flaky, buttery crust. It’s the perfect dessert for summer gatherings and easy enough to make at home!

  • 1 pre-made pie crust (or homemade)
  • 6 cups fresh strawberries, hulled and halved
  • ¾ cup granulated sugar
  • ¼ cup cornstarch
  • ¼ cup water
  • 2 tablespoons lemon juice
  • 2 tablespoons butter, cut into small pieces
  • Optional: Whipped cream for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place pie crust in a 9-inch pie plate. Crimp the edges.
  3. In a large saucepan, combine sugar and cornstarch.
  4. Stir in water and lemon juice until smooth.
  5. Bring to a boil over medium heat, stirring constantly.
  6. Cook for 1-2 minutes, or until thickened and clear.
  7. Remove from heat and stir in butter.
  8. Gently fold in the strawberries.
  9. Pour the strawberry mixture into the prepared pie crust.
  10. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Let cool completely before slicing and serving.
  12. Optional: Top with whipped cream before serving.

Notes

For an extra glossy finish, brush the baked crust with an egg wash before baking. Serve chilled for the best flavor and texture.
