Strawberry Sugar Cookies

  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup fresh strawberries, finely chopped
  • 2 tablespoons strawberry jam
  • Optional: pink sanding sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Beat in the egg, then mix in the vanilla extract and strawberry jam until combined.
  5. Gently fold in the chopped fresh strawberries.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Roll dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  8. Optional: sprinkle the tops with pink sanding sugar for a decorative touch.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra freshness, drizzle a light glaze made with powdered sugar and a splash of strawberry juice once cookies have cooled.
