Suya Spiced Grilled Chicken Thighs

These Suya Spiced Grilled Chicken Thighs feature tender, juicy chicken infused with a vibrant, smoky West African spice blend, perfect for a flavorful and easy weeknight dinner.

  • 4 boneless, skinless chicken thighs
  • 2 tbsp suya spice mix (ground peanuts, cayenne pepper, paprika, ginger, garlic powder)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • Skewers (optional)

Instructions

  1. In a bowl, combine the suya spice mix, olive oil, salt, black pepper, and lemon juice to create a marinade.
  2. Add the chicken thighs to the bowl and coat them thoroughly with the marinade.
  3. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
  4. Preheat the grill to medium-high heat.
  5. If using skewers, thread the chicken thighs onto skewers for easier grilling.
  6. Grill the chicken thighs for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the outside is nicely charred.
  7. Remove from the grill and let rest for 5 minutes before serving.
