  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Cooked rice, for serving
  • Optional toppings: sliced green onions, sesame seeds, chopped peanuts, sriracha

Instructions

  1. In a bowl, toss the chicken cubes with cornstarch until evenly coated.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  4. In a small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, and sesame oil.
  5. Pour the sauce over the chicken and cook until the sauce has thickened slightly, about 2-3 minutes.
