A hearty and nutritious Sweet Potato Lentil Stew that combines tender lentils and sweet potatoes in a flavorful, spiced broth perfect for a comforting meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1 cup dried red lentils, rinsed
  • 2 medium sweet potatoes, peeled and cubed
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic, cumin, smoked paprika, and cinnamon; sauté for another 1-2 minutes until fragrant.
  3. Add rinsed lentils, cubed sweet potatoes, diced tomatoes (with juice), and vegetable broth to the pot. Stir to combine.
  4. Bring the stew to a boil, then reduce heat to low and simmer uncovered for 25-30 minutes, or until lentils and sweet potatoes are tender.
  5. Season with salt and pepper to taste. Remove from heat.
  6. Ladle stew into bowls and garnish with fresh chopped cilantro before serving.

Notes

For extra protein, serve with a dollop of Greek yogurt or sprinkle with toasted nuts. Leftovers taste even better the next day!
